TEXAS-DESSERT-PECAN PIE!

*Much to my surprise, my new friend Gina, from New York City, has never heard of pecan pie and would like to know more.
*Well Gina, pecan pie is a delicious dessert that is believed to have come to Texas in various forms from various parts of the American “South,” back in the 1800’s, when many Southerners were moving here to take advantage of all of the opportunities that “The Lone Star State” was already offering to its more deserving newcomers, which naturally included the people who were bringing their favorite foods with them…including their own recipes for pecan pies...so that they could remind themselves of their former homes…meaning the other states of the American “South”… and also enrich their new home…meaning Texas…where they and other converts evolved this already nearly perfect dessert into its present totally perfect form, which is made with pecans (which is properly pronounced “PAH-cahns” and not “Pee-caans” as you will sometimes hear in places like New York City) and most frequently with corn syrup…which will probably be "Karo" brand corn syrup…but which can also be sorghum syrup or various other kinds of syrups, any of which can produce a very delicious dining experience, especially when it is enjoyed at the end of “the perfect barbecue dinner” (see my earlier posting on this subject).
