*Here is yet another food item that my recent heart attack has forced me to take off of my LONG list of comfort foods, but even so I refuse to forget about good Texas barbecue altogether, and instead choose to continue enjoying it by sharing some of my thinking on the subject with those who still can enjoy it, which I have done here by re-posting an entry to one of my earlier blogs, which I hope you enjoy.

Barbecue-A Texas Tradition
"While traveling through many areas of the United States and several other countries, I have been able to sample many different kinds of barbecue…and by “barbecue” I mean the food and not the cooking process and/or the social gatherings that go by the same name…many of which I have enjoyed very much and others of which I have not enjoyed as much, and after I had done all of this basic research, over a period of many years, I discovered that my idea of the perfect barbecue dinner had remained the same as it had been before I first left my native Texas so many years before that, and that is that …
1. The meat should be beef, preferably a nice brisket, and if that is not available then maybe some “chopped” beef would be okay, with maybe some “hot” links (sausages) of various kinds, and maybe some ribs (beef or pork) thrown in.
2. The menu could occasionally include a variety of barbecued fish and/or fowl, as long as these items do not interfere with the serious business of consuming large quantities of the before mentioned barbecued meats.
3. The sauce should be served on the side and be thick enough to stick to any of the meat that I might drop on the floor, so that I won't have to apply additional sauce before I pick it up again and eat it.
4. The condiments should include an optional selection of dill pickles, onions, and jalapeno peppers.
5. The side dishes should be available on an optional basis, and should include at least coleslaw, pinto beans, and potato salad.
6. The meal should be accompanied by large quantities of bread, which could be plain old white bread and/or biscuits and/or cornbread, with lots of real butter to go with it.
7. The dessert selections should include various kinds of cobblers, and/or puddings (preferably Banana pudding) along with some pecan pie, and lots of home made ice cream with/without whipped cream on top.
8. The whole thing should be served on real dishes...which can be plastic...and be accompanied by real flatware...which can also be plastic...which should all be reasonably clean and as safe as possible for those who are blessed to be enjoying this perfect barbecue dinner, which in order to be perfect has to include me, of course."
